vegan muffaletta

thinly sliced zucchini and summer squash marinated in garlic, lemon, salt and olive oil (because some people think meat is for jerks)

cherry tomatoes halved and tossed with garlic, salt and olive oil

arugula left to marinate with all the other stuff

white beans run through a food processor with garlic, olive oil and salt (because fake cheese is for weenies)

sun-dried tomatoes run through a food processor with almonds, lemon basil, garlic, olive oil and salt (because olives are gross)

all of that stuffed in a hollowed out ciabatta loaf, wrapped in plastic and pressed with a heavy thing in the fridge overnight.
